Tonight, enjoy your dinner at a well-selected local restaurant.
Depart from Hanoi and travel about four hours to Halong Bay. Take a small boat to your junk, which will be anchored just offshore.
After a short safety briefing, set sail to the outer reaches of Bai Tu Long Bay, passing stunning limestone islands jutting out of the jade waters. Explore the well-hidden Thien Canh Son cave before relaxing on a white sandy beach or taking to the water for a spot of kayaking.
In the evening join in a cooking demonstration before a pleasant evening meal on board.
Start a new day with tai chi on the sundeck with a beautiful morning view of Bai Tu Long, followed by a cup of tea or coffee and breakfast in the fresh air while cruising to the Cong Do area.
Explore the well-hidden Thien Canh Son Cave, one of hundreds in the Halong Bay area, before enjoying a final example of Halong hospitality with an early buffet lunch on the way back to the harbor.
We would then drive to Hanoi in the afternoon.
Begin the morning with Ho Chi Minh Mausoleum, showcasing the man who led Vietnam's campaign for independence from French colonial rule. See the one pillar pagoda, the presidential palace, and the 11th century Temple of Literature, honoring Confucius.
Take a breezy cyclo ride through the Old Quarter's 36 streets. In the evening, your guide will take you on a culinary adventure of Old-Quarter street food. Taste noodles, breads, and snacks, and dessert from Hanoi's best-known ice-cream parlor.

As you pass through the city of Danang, stop at Cham Sculpture Museum. The Cham civilization ruled central Vietnam from the 2nd to 13th centuries and is considered an extremely important contributor to the nation's religion and culture.
In the morning, we would visit a local produce market before cruising along the Thu Bon River to Red Bridge Cooking School. There you would tour the school's herb gardens and enjoy an informal cooking lesson. Your chef would explain the secrets of popular Hoi An specialties.
Hoi An is famous for dishes like cao lau, a medley of yellow noodles, pork slices, and pickled hot peppers, and mi quang, a noodle dish featuring boiled quail eggs and chunks of baked rice cake.
The 8th Day in Vietnam would provide you with some time on your own after a week's touring. Have a good rest and make your own discoveries. Your guide and hotel would be glad to facilitate your plans.

It's an early start to the day as you go by boat the daily floating market of Can Tho. Experience the flurry of vendors trading their wares, as boats teeming with fruit, vegetables, and household goods ply the waters. Then travel on to Ho Chi Minh City, about 4 hours' drive.
Journey to the Cu Chi Tunnels through countryside that was once a stronghold of the Viet Cong.
First watch a short video about what life was like for soldiers in the cramped tunnels, central to the famous 1968 Tet Offensive. The tunnels served as living quarters, supply routes, and hospitals for thousands of guerilla fighters. American bombers' hundreds of bombs have left huge tell-tale craters behind. Today, the tunnels are a testimony to the Vietnamese people's resiliency.
Your guide will meet you at your hotel and transfer you to the airport for your flight to Bali.
Upon arrival at Ngurah Rai International Airport, meet your local Bali guide for a 4-day holiday and journey through photogenic spots in Bali. You will be transferred directly to your hotel in Seminyak for check in and overnight adjustment to the pace of Bali.
A fun 45-minute speedboat ride will bring you to Nusa Penida, where your driver will be waiting. Drive for an hour to the east side of the island to visit Diamond Beach, with a panoramic view of a diamond-shaped cliff, fine-sand beaches, and perfectly turquoise ocean.
